El Paraiso is a small coffee growers' association of around 65 producers located in Tarqui, in the Huila department of Colombia. Tarqui sits in an area of Colombia where the Andes mountains split into three separate mountain ranges called "cordilleras", and between the Central and Eastern Cordilleras you'll find El Paraiso.
Joe has a special relationship with El Paraiso and their local importer/exporter, Caravela. We buy 1/3 of the farm's annual output each year, and this year our head roaster, Ed Kaufmann, was able to visit the farm in person.
Coffees in this area are fully washed and sun-dried at each individual farm, then delivered to El Paraiso's operations base in a small warehouse on the mountain road. They have a small sample roasting and cupping lab to determine the quality of a coffee—enabling them to pay farmers the same day the coffees are dropped off. The system is constructed in a way that benefits all parties for hard work and high quality.
Coffee from El Paraiso is primarily Caturra variety, with a smaller percentage of Colombia grown as well, under 40% shade cover from Plantain, Chacha Fruto, Guamo, and Nogal trees. It's grown at 1600-2000 meters above sea level, and harvested around the year (one of the benefits of Colombian coffee!)
All orders are roasted on Monday and Thursday and are shipped on the same day. Note that if you order Two-Day Shipping after 7am on any given day, your order will be processed *the following roast day*. We do this to ensure your coffee arrives to you as fresh as possible!
