This balanced coffee from the La Copia district of Cajamarca, Peru, comes from the Association of Ecological Agricultural Producers GUAY APAE, a group of small-scale farmers who share a keen commitment to quality. Seen as an inspiration to other producers in their region, these coffee growers exemplify not only a dedication to quality coffee but also social responsibility, including gender equality for women in the coffee industry. This fully washed coffee comes from an altitude of approximately 1,600–2,000 meters above sea level, in geographic and climatic conditions favorable to producing superior coffee. GUAY APAE is committed to meticulous post-harvest processing, resulting in clean, balanced flavor, acidity, and body—in this case, a citrus-forward cup with notes of stonefruit, graham, and cider. We purchased this lot through our friends at Caravela, whose selective sourcing process rewards high quality coffee with better prices to the farmers. As such, we're as proud to showcase all that's behind the cup as what's in it.
