Our most recent offering from Rwanda comes from the Kibirizi washing station in the Nyamagabe district of Rwanda. This washing station is among the area's newest—built in 2016 by two coffee farmers from the area, Immaculate and Francine, who wanted more control over the processing of the fruits from their more than 20,000 coffee tree estate. Kibirizi processes coffee for Immaculate and Francine as well as that of their neighbors, and the owners hope to continue growing its capacity to serve the region with this quality focused facility. In 2016, their inaugural year, the farmers processed 220 tons of cherries.
This Bourbon coffee is grown at an elevation of 1,600 meters above sea level, then taken to Kibirizi station where it is depulped using disc depulpers and fermented for 24 hours before being washed in concrete tanks and dried on raised beds. We're as enthusiastic about the quality control and high standards at Kibrizi as we are about the characteristic, vivid flavors from this vibrant coffee region. In the cup, we tasted notes of fig and maple in a medium body.
