Lovingly named for our first store in New York City, the Waverly is Joe's espresso vanguard. Seasonally driven, but blended to achieve a balance of body and sweetness with lively fruit notes year-round, this espresso is perfect as a straight shot or in milk.
We build the Waverly carefully through constant cupping at our Red Hook roasting facility, pairing a sweet and chocolatey component (like Peru Cenfrocafe Apukuna or Mexico Finca Nueva) with a brighter, more citrus-and-stonefruit-forward coffee like El Paraiso, a coffee from Tarqui, Huila region, Colombia. El Paraiso grows in a part of the world with year-round harvest and ensures we always have fresh crop to use for our signature espresso blend. We craft this blend to ensure just the right yin and yang of each two components so that straight espresso tastes sweet and yet complex, and that milk-based drinks are always delicious.
All orders are roasted on Monday and Thursday and are shipped on the same day. Note that if you order Two-Day Shipping after 7am on any given day, your order will be processed *the following roast day*. We do this to ensure your coffee arrives to you as fresh as possible!
